There has been a huge debate the last few years about whether or not pineapple belongs on pizza. Some people say yes and some say no. Well, we are here to say that whatever floats your boat is fine. But we do, indeed, put pineapple on pizza. That being said, we have more than one pizza that has pineapple on it. If you hate pineapple on pizza then you can go right ahead and move on now. Everyone has a sweet tooth for something right? Well ours is for this amazing pizza. It’s super extra, no really, extra, extra, extra deliciousness. In all reality, this pizza includes Extra Canadian Bacon in all of its salty goodness, Extra Pineapple for its sweet sweet tang, Extra Cheese and Breakfast Bacon for the savory flavor with our delicately crafted Red Sauce! This is a great pizza to try anytime you are feeling like going…. Extra!
The Bull Rider
Looking for something a little wild and crazy? Not too wild really, but wildly delicious. Our pizza called the Bull Rider is also different than most pizzas. It’s a little spicy, a little sweet, and definitely savory. This flavorful pizza starts with our chipotle lime bbq sauce, then we add the meat, chicken, then breakfast bacon, and sausage. We top it off with fresh pineapple. This is really one great pizza!
Those are our All Star Pizzas that include pineapple. But remember we can literally do any combination that your heart desires! We feel like some other toppings go better with Pineapple than others. We think that pepperoni, and jalapenos, with pineapple is an amazing and simple combination! Sweet, salty, and spicy, you really can’t go wrong with that! Bacon Pizza with Caramelized Pineapple

INGREDIENTS
3 oz. bacon*
8 oz. can pineapple chunks in juice
1 Tbsp brown sugar
1 large pizza dough**
1/2 cup pizza sauce
4 oz. shredded Monterey Jack cheese
2 green onions
INSTRUCTIONS
1.
Slice the bacon into one-inch pieces. Cook in a large skillet over medium heat until crisp and brown on the edges, but still slightly soft in the center (about 5 minutes). The bacon will finish cooking on the pizza. Transfer the bacon to a paper towel lined plate and pour off most of the bacon grease from the skillet.

Drain the canned pineapple well. Cut the chunks in half to make smaller pieces. Add the pineapple chunks to the skillet along with the brown sugar. Sauté over medium heat until the pineapple gets brown and sticky on the edges (about 5 minutes). Remove from the heat.

Preheat the oven to 450ºF. Stretch the pizza dough to fit a 14 inch pizza pan. Spread the sauce over the surface of the dough. Sprinkle the shredded Monterey Jack cheese over the sauce. Finally, top the pizza with the cooked bacon and caramelized pineapple pieces.
Bake the pizza for about 15 minutes, or until the crust is golden brown and the cheese is bubbly on top. After removing the pizza from the oven, top with sliced green onions, cut into eight pieces, then serve.

*When I buy 12oz. packages of bacon, I cut it into quarters (across the slices) and freeze what isn’t used immediately. That way I can take out one 3oz. portion at a time, as needed, for future recipes.
**I used the entire pizza dough recipe instead of dividing it in two.
Barbecue Pineapple, Jalapeño and Feta Pizza

Vegetarian barbecue pizza topped with sweet pineapple, spicy jalapeño and salty feta! This pizza is totally irresistible and really easy to make at home. Recipe yields two 11-inch pizzas.

1 batch easy whole wheat pizza dough, seasoned generously with freshly ground black pepper
½ cup barbecue sauce
2 cups (8 ounces) grated low-moisture, part-skim mozzarella cheese
⅓ pound (1 cup sliced) fresh pineapple chunks, sliced into ¼-inch thick, bite-sized pieces
¼ to ⅓ cup pickled jalapeños (feel free to eyeball based on how spicy you want your pizza)
½ cup (2 to 3 ounces) crumbled feta
3 tablespoons finely chopped red onion
Optional garnishes
Red pepper flakes, a light sprinkling of chopped fresh cilantro, more barbecue sauce or a smoky hot sauce

Preheat oven to 500 degrees Fahrenheit with a rack in the upper third of the oven. If you’re using a baking stone or baking steel, place it in the oven on the top rack.Prepare dough through step 5 (my only suggested change is to season the flour mixture generously with freshly ground pepper before turning on the food processor).
Evenly spread ¼ cup barbecue sauce over each pizza. Divide toppings evenly over the two pizzas, beginning with grated mozzarella, followed by sliced pineapple, pickled jalapeños, crumbled feta and chopped onion.
Bake pizzas individually on the top rack until the crust is golden and the cheese is golden and bubbly, about 12 minutes (or significantly less, if you’re using a baking stone/steel—keep an eye on it). Transfer pizza to a cutting board, slice and serve with desired garnishes on the side.

PIZZA DOUGH PREPARATION TIPS: This crust turns out especially golden and bubbly if you bake it on a hot pizza stone or pizza steel instead of a baking sheet. I roll out the pizza on parchment paper, cut to size, then scoot it onto the pizza steel using a cookie sheet. The pizza will bake much faster on a hot surface, so keep an eye on it and reduce the baking time accordingly. I hear this dough works great on the grill, too!
